Have you ever watch cooking shows, youtube videos, or your family whip up an amazing soup? well do not worry i relate. Here is what i do.

- gather your ingredients
- if you already have the essentials in your fridge then it is easy as learning ABC
1 small-medium pumpkin , 1 small onion, 2 small garlic, a few of your favorite seasonings (paprika, chili powder, adobo, 1 can of coconut milk etc) All the seasoning are 1tsp measurements you can always add more seasonings. If you do not like coconut or you are like, “i am over this coconut milk trend” lol you can use vegetable broth or water…. About 1 cup to 1 1/2 cup about the same equivalent of a canned coconut milk…..
Start to prepare the pumpkin: you want to cut the pumpkin in half, scrape the seeds out of the pumpkin with one of your sturdy spoon, reserve the seeds in a bowl, drizzle some olive oil or coconut over the pumpkin, and add some salt and pepper which optional. You can also sauteed the pumpkin on the stove with the onion, garlic, your choice of seasonings and coconut milk to blend evenly giving your meal a smooth texture and amazing taste. Once everything is soft not mushy then add it your blender.
IF YOU ARE ROASTING THE PUMPKIN IN THE OVEN THE SAME METHOD APPLY BELOW DO NOT SERVE THE SKIN… TAKE THE SKIN OFF BEFORE YOU PLACE IN THE POT TO SAUTEED WITH THE ONION AND GARLIC.
Be careful this is hot… You want to make sure that it is not plugged in and no children is in attendance FOR SAFETY…. Place half of the batch into the blender if ALL of pumpkin cannot fit into the blender….
You can roast the pumpkin seeds tossing with salt and pepper and some olive oil then place on baking sheet or cookie tray (which ever one you have) and then let it roast for 20 min or until the color changes NOT BURN… you can also taste it before you turn off the oven to make sure that it has a crunch to it…
Place your blend pumpkin soup in the same pot—-because who wants to watch so many dishes—-for about 10 mins PLEASE STIR serve….. This will all be on low-medium heat.. We do not want to serve burn food
