Spring roll with Crispy kale and fried plantains

Some days I do not eat as healthy as I would like to but I challenge myself to eat better and better every day. I want to be that ninety years old grandma running after her great-grandkids lol. With that being said I’ve made a quick vegan or vegetarian and gluten-free dinner.

Vegetable spring roll crispy kale with fried plantains everything that you want in a food is on this plate lol. In the vegetable spring roll, there is cabbage, carrots, corn, and broccoli (you don’t normally eat in a veggie roll).

You get to add whatever vegetables you like as long as it held in the wrapper.

I was full after I ate the entire meal. And this only takes about thirty minutes. Everything is made completely from scratch except for the wrappers for the spring roll.

You can always add more ingredients if you are not a kale lover you can use spinach instead, either this is delicious and it only takes about thirty minutes.
